Ratatouille

1 zucchini
1 eggplant
2 large tomatoes
1 large onion
1 garlic clove
1 tablespoon of olive oil
Thyme
Laurel leaf
Salt, pepper

Wash the vegetables. Dice the zucchini, eggplant, tomatoes, and onion. Set aside. Mince the garlic. In a saucepan, fry the garlic in the oil. Add the tomatoes, and fry for 10 minutes. Add the remaining vegetables, thyme, laurel leaf, and salt and pepper.
Cook for 1 hour, covered, over low heat, stirring occasionally, before serving.

I love ratatouille! And not just because of Pixar. But I love that too.

cooked in 1 hour are you sure.? it's vegetable 15 min is good..nutrients is intact.

what is the local name for zucchini? is it available in the local market? if not what is an alternative for it?

Yes, zucchini is available in SM Hypermart. I see it in the vegetable section all the time and have been wondering what recipe i could use for it. I guess Ratatouille is the answer! :-)
