3/4 cup of cooked chopped spinach 1/2 cup of low-fat cheese 1 teaspoon of nutmeg 2 egg whites 2 tablespoons of grated Parmesan cheese Salt and pepper
Preheat the oven to 400 degrees F. In a bowl, combine the spinach and cheese. Add the nutmeg, salt, and pepper. Beat the egg whites with a mixer until they form soft peaks, then slowly incorporate the spinach. Pour into two greased ramekins or individual containers. Top with Parmesan cheese. Bake for 15 to 20 minutes, until the soufflés are puffy and golden brown. Serve.
