1 whole chicken, cut into pieces 1/2 cup of coconut cream 2 onions, peeled and chopped 3 cloves of garlic, crushed 1 cup of water 3 tablespoons of curry powder Salt, pepper
Season and brown the chicken pieces in vegetable oil. Remove the skin and set aside. In the same pan, cook together the onions, garlic, water, and curry powder. Return the now skinless chicken to the pot. Bring to a boil, and let simmer over medium-low heat, covered, for 30-40 minutes. Add the coconut cream and leave to simmer once again, for the sauce to reduce, for 3-4 minutes. Serve with rice.
