1/4 cup of soy sauce 1/4 cup of water 1/4 cup of white sugar 1/4 teaspoon of onion powder 1/4 teaspoon of ginger, grated 2 cloves of garlic, minced 6 chicken breasts 3/4 teaspoon calamansi juice 1 teaspoon gojuchang (Korean chili paste) (optional, or hot sauce) sesame seeds (optional)
Combine the first six ingredients in a saucepan. Set to high heat and bring to a boil. Reduce to low heat, and leave to simmer for 5 minutes. Turn off the heat. And let cool completely. Slice the chicken breast meat into strips, removing the skin if preferred. Once the marinade has cooled, mix in the calamansi juice and chili paste. Add the chicken strips, and marinate for at least 3 hours in the refrigerator. Spread the chicken strips evenly in a large baking pan, and place in an oven that has been preheated to 350 degrees F. Bake for 35 minutes, stirring halfway through so that the chicken is evenly cooked. Sprinkle with sesame seeds upon serving.
