2 cups of cooked rice 1/4 cup of cooked corn kernels 100 g of canned red beans (about 1/4 can), rinsed and drained 1/4 kilo of peeled tomatoes 1 onion, minced 1/4 kilo of beef cubes, cut into 1/4-inch cubes 2 tablespoons of vegetable oil Salt, pepper, paprika, hot sauce
Heat the oil in a pot and brown the meat on all sides. Set aside. Add more oil if necessary, and add the onions. When the onions are brown, return the meat to the casserole and sprinkle with paprika. Add the peeled tomatoes and cover with water. Simmer, covered, for 30 minutes. Add the rice. Season with salt and pepper, and hot sauce to your liking. Continue cooking over low heat, half-covered, for 25 minutes. Add the corn and red beans and cook for another 5 minutes.

By using brown rice, you can boost your fiber intake. Just FYI. Very good flavor, but try a dash or two of cumin to the meat as it simmers.
