1 pound of lentils 1 laurel leaf 1 large onion, minced 2 carrots, diced 2 cups of crushed tomatoes (fresh or canned) 1 tablespoon of ground coriander 1 tablespoon of oil Salt, pepper 1/4 teaspoon of dried thyme
Wash and drain the lentils, picking out any foreign objects. Add the lentils and laurel leaf in the pot and fill with water, about six inches above the lentils. Bring to a boil, partially covered, about 20-30 minutes. Skim off the foam. Add the onion and carrots, and cook until the carrots are tender, for another 20-30 minutes. Add the crushed tomatoes, coriander, thyme, oil, salt and pepper. Taste and adjust seasoning. Stir and simmer until the lentils reach the desired consistency.
