Ponzu is a Japanese citrus-based sauce. Combined with soy, it creates a delicious sour sauce that is often used as a dipping sauce for various hot pot dishes.
Ingredients: 6 cups udon noodles (preferably buckwheat) ¼ cup spring onions, chopped 1 tbsp garlic ½ cup oyster or shiitake mushrooms 1 tsp toasted sesame oil 1 tbsp ginger, finely chopped 1 bell pepper, julienned 1 carrot, julienned ¼ cup bean sprouts Salt, cayenne pepper 1 cup broccoli, florets 1 cup green beans, slant sliced
For sauce: 4 cloves garlic, chopped 2 tsp fresh ginger, chopped 1 stalk lemongrass ¼ cup red pepper flakes 2 cups water ¼ cup white wine ½ cup soy sauce ½ cup brown rice syrup ¼ cup muscovado sugar 2 basil stems
For garnish 1 pc (per serving) calamansi
Preparation: 1. For sauce: mix all the ingredients together in a saucepan, bring to the boil, then simmer for 20 to 25 minutes. Remove from heat, stir and set aside. 2. For noodles: sauté spring onions, garlic and mushrooms in the sesame oil, then add the ginger and seasoning. 3. Add the udon noodles then the vegetables. Season more, if necessary. 4. Add the ponzu sauce at the end, then serve with calamansi or lime wedges.
