1 block soft tofu (diced) 1 medium bell pepper (diced) 1 small diced carrot 1 small diced eggplant 1 small diced potato 1 small can button mushrooms (diced) 1 small diced onion garlic (optional) Japanese curry roux.
Directions:
1. Saute together garlic, onion,carrots, potatoes, onions,, red bell pepper, and eggplant. (set aside)
2. Heat 3 cups of water and add 2 - 3 cubes of Japanese curry roux. Stir often so the roux doesn’t stick. Add ground black pepper and a dash of sugar to taste.
3. Add the cubed soft tofu in the curry sauce and eventually combine the sauteed veggies in the mixture.
4. Serve hot with brown rice or crusty bread.
