4 eggs
2 large apples
1 tablespoon of honey
1 tablespoon of sugar
1/4 teaspoon of cinnamon (optional)
2 tablespoon of butter

Peel and core the apples and cut them into chunks. Melt 1 tablespoon of butter in a non-stick pan and sauté the apples until they become tender and transparent. Add the sugar and cinnamon, if using. Mix together, and set aside.

Crack the eggs in a bowl and whisk until well blended. Heat a large non-stick pan and add the remaining butter, and spray with cooking spray if available. Make sure that the pan is evenly coated. Place the egg mixture and slowly swirl the pan around to entirely coat the surface.

Add the apple mixture on top of the eggs, and loosen the omelet from the pan with the spatula. Slide the omelet onto a serving plate, and fold over one side of the omelet to cover the eggs. Drizzle with honey. Sprinkle with additional sugar if desired.

this sounds yummy but isn't it going overboard with the sugar and honey? maybe a littlte splenda will so instead of the sugar to keep the recipe low in sugar.

Sounds pretty simple and tasty, I guess we could use any kind of fruits for this. What about mango? Do you think it will fit with egg :))

sounds yummy. but i think using honey is better than using sugar...unless it's the muscovado kind. or skip the sugar and just put honey before eating as apples have their own sugar already.
